A nudge toward healthier food choices: the influence of health star ratings on consumers’ choices of packaged foods

Purpose This study aims to reveal the presence of products with negatively correlated nutrients in marketplace and their implications for consumer choices. It also investigates role an overall simplified nutrition scoring system (SNSS) – health star rating (HSR), improving healthiness Design/methodology/approach Three (lab, online eye-tracking) experiments investigate effects mitigating SNSS consumers’ food A final panel-data analyzes changes actual purchases after introduction HSRs (an SNSS) Australia. Findings Experimental results show that consumers use a decision strategy based on dominant nutrient choose products, which creates halos leads less healthy choices when have nutrients.
